Cottage Cheese Cheesecake Bars Simple and Tasty Treat
Ingredients
- 2 cups cottage cheese
- 1 cup Greek yogurt
- 3 quarter cups granulated sugar
- 3 large eggs
- 1 tablespoon vanilla extract
- 1 tablespoon lemon juice
- 1 half cup all-purpose flour
- 1 quarter teaspoon salt
- 1 teaspoon baking powder
- 1 quarter cup melted unsalted butter
- 0 optional Fresh berries for topping
Instructions
- Preheat your oven to 350°F (175°C) and line a 9x9 inch (or similar) baking pan with parchment paper, allowing some overhang to facilitate removal later.
- In a blender or food processor, combine the cottage cheese and Greek yogurt. Blend until smooth and creamy.
- In a large mixing bowl, whisk together the sugar, eggs, vanilla extract, and lemon juice until well combined and airy.
- Gradually add the smooth cottage cheese and yogurt mixture to the egg mixture while whisking until fully incorporated.
- In a separate bowl, mix together the flour, salt, and baking powder. Then, gently fold this dry mixture into the wet ingredients, being careful not to over-mix.
- Finally, fold in the melted butter until the batter is smooth and uniform.
- Pour the batter into the prepared baking pan and smooth the top with a spatula.
- Bake in the preheated oven for about 30-35 minutes, or until the edges are lightly golden and a toothpick inserted in the center comes out clean.
- Once baked, remove from the oven and allow to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
- Once cooled, refrigerate for at least 2 hours before slicing into bars. This allows the bars to set properly.
- Optional: Top with fresh berries or a sprinkle of powdered sugar before serving for extra flair.
