Ingredients

  • 2 cups cottage cheese
  • 1 cup Greek yogurt
  • 3 quarter cups granulated sugar
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 half cup all-purpose flour
  • 1 quarter teaspoon salt
  • 1 teaspoon baking powder
  • 1 quarter cup melted unsalted butter
  • 0 optional Fresh berries for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9x9 inch (or similar) baking pan with parchment paper, allowing some overhang to facilitate removal later.
  2. In a blender or food processor, combine the cottage cheese and Greek yogurt. Blend until smooth and creamy.
  3. In a large mixing bowl, whisk together the sugar, eggs, vanilla extract, and lemon juice until well combined and airy.
  4. Gradually add the smooth cottage cheese and yogurt mixture to the egg mixture while whisking until fully incorporated.
  5. In a separate bowl, mix together the flour, salt, and baking powder. Then, gently fold this dry mixture into the wet ingredients, being careful not to over-mix.
  6. Finally, fold in the melted butter until the batter is smooth and uniform.
  7. Pour the batter into the prepared baking pan and smooth the top with a spatula.
  8. Bake in the preheated oven for about 30-35 minutes, or until the edges are lightly golden and a toothpick inserted in the center comes out clean.
  9. Once baked, remove from the oven and allow to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
  10. Once cooled, refrigerate for at least 2 hours before slicing into bars. This allows the bars to set properly.
  11. Optional: Top with fresh berries or a sprinkle of powdered sugar before serving for extra flair.
