Chicken Sweet Potato Skillet Flavorful One-Pan Meal
Ingredients
- 2 pieces boneless, skinless chicken breasts, diced
- 2 medium sweet potatoes, peeled and cubed
- 1 piece bell pepper (red or yellow), diced
- 1 piece red onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 0.5 teaspoon cayenne pepper
- 2 tablespoons olive oil

- to garnish fresh parsley, chopped
Instructions
- In a large skillet, heat olive oil over medium heat. Add the diced chicken breasts and season with salt, pepper, and smoked paprika. Cook for about 5-7 minutes until the chicken is golden and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped red onion and bell pepper. Sauté for about 3-4 minutes until they start to soften.
- Add the cubed sweet potatoes and continue to cook for another 7-10 minutes, stirring occasionally, until the sweet potatoes are tender. You may add a splash of water to steam them if needed.
- Stir in the minced garlic, dried oregano, and cayenne pepper, cooking for an additional 1-2 minutes until fragrant.
- Return the cooked chicken to the skillet and mix everything thoroughly. Taste and adjust seasoning as needed.
- Remove from heat and garnish with fresh parsley before serving.
