Ingredients

  • 1 cup cream cheese, softened
  • 1 2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup cherry pie filling
  • 10 pieces egg roll wrappers
  • 1 tablespoon melted butter
  • 1 4 cup granulated sugar (for coating)
  • 1 teaspoon cinnamon (for coating)
  • as needed oil for frying (vegetable or canola)

Instructions

  1. In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
  2. Lay an egg roll wrapper on a flat surface, with one corner pointing towards you. Spoon about 2 tablespoons of the cream cheese mixture onto the wrapper, slightly above the center. Top with 1 tablespoon of cherry pie filling.
  3. Fold the corner closest to you over the filling, then fold in the sides snugly. Roll the wrapper away from you to encase the filling completely. Seal the edges with a little melted butter.
  4. Repeat the process with the remaining wrappers and filling.
  5. In a deep frying pan or pot, heat oil over medium heat until it reaches 350°F (175°C). Carefully add the egg rolls in batches, frying until golden brown and crispy, about 3-4 minutes per side.
  6. Remove the egg rolls and drain them on paper towels.
  7. In a small bowl, mix granulated sugar and cinnamon. While the egg rolls are still warm, toss them in the cinnamon-sugar mixture for an extra sweet touch.
