Ingredients

  • 1 lb ground beef
  • 0.5 lb ground pork
  • 1 cup breadcrumbs
  • 0.5 cup grated Parmesan cheese
  • 1 cup shredded cheddar cheese (divided)
  • 0.5 cup diced onion
  • 0.5 cup diced bell pepper
  • 2 cloves garlic, minced
  • 1 large egg
  • 0.25 cup milk
  • 0.25 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried Italian herbs
  • to taste Salt and pepper
  • 2 cups mashed potatoes (prepared)
  • for garnish Fresh parsley, chopped

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch casserole dish.
  2. In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, Parmesan cheese, half of the shredded cheddar cheese, diced onion, diced bell pepper, minced garlic, egg, milk, ketchup, Worcestershire sauce, Italian herbs, salt, and pepper. Mix until just combined; do not overmix.
  3. Transfer the meat mixture into the greased casserole dish, forming an even layer across the bottom.
  4. Spread the prepared mashed potatoes evenly over the meatloaf mixture, smoothing it out with a spatula.
  5. Sprinkle the remaining half of the shredded cheddar cheese over the top of the mashed potatoes.
  6. Bake in the preheated oven for 45-50 minutes, or until the meatloaf is cooked through and the cheese is bubbly and golden.
  7. Once baked, let the casserole cool for about 5-10 minutes before serving. Garnish with chopped fresh parsley for a pop of color.

💡 Chef's Notes

Cut the casserole into squares and serve on plates, allowing the layers to be visible. Pair with a side of green salad for a complete meal.
