Ingredients

  • 1 medium head cauliflower, florets only
  • 1 large egg
  • 1 cup shredded mozzarella cheese
  • 0.25 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • Optional toppings: marinara sauce, more cheese, vegetables, pepperoni, or herbs

Instructions

  1. Preheat the oven to 450°F (230°C) and line a baking sheet with parchment paper.
  2. In a food processor, pulse the cauliflower florets until they resemble fine rice or crumbs. This should yield about 2-3 cups of cauliflower rice.
  3. Transfer the cauliflower rice to a clean kitchen towel or cheesecloth. Squeeze out as much moisture as possible. This step is crucial to achieving a crispy crust.
  4. In a mixing bowl, combine the drained cauliflower with egg, mozzarella cheese, Parmesan cheese, garlic powder, onion powder, oregano, salt, and black pepper. Mix until well incorporated.
  5. Shape the mixture into a pizza crust on the prepared baking sheet, about ¼ inch thick. Make sure to create a slight rim around the edges to hold toppings.
  6. Bake the crust in the preheated oven for 12-15 minutes or until golden brown and firm.
  7. Remove the crust from the oven and add your desired toppings. Return to the oven for an additional 5-7 minutes to melt the cheese and heat the toppings.
  8. Once cooked, let the pizza cool for a few minutes before slicing and serving.

Make sure to remove as much moisture from the cauliflower as possible for a crispy crust.
