Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup fresh basil leaves, roughly chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup mozzarella cheese, shredded
  • 2 tablespoons balsamic glaze
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • to taste salt
  • to taste pepper
  • as needed toothpicks or kitchen twine for securing

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, mix together the chopped basil, halved cherry tomatoes, and shredded mozzarella cheese until well combined.
  3. Take each chicken breast and make a deep pocket in the side, taking care not to cut all the way through.
  4. Stuff each chicken breast with the basil, tomato, and mozzarella mixture, pressing down gently to ensure they are filled.
  5. Secure the openings of the stuffed chicken breasts with toothpicks or tie them with kitchen twine to prevent the filling from spilling out during cooking.
  6. In a large oven-safe skillet, heat the olive oil over medium heat.
  7. Season the chicken breasts with salt and pepper, then sear them in the skillet for about 4-5 minutes per side, or until golden brown.
  8. Add minced garlic to the skillet and sauté for 1 minute until fragrant.
  9. Drizzle the balsamic glaze over the chicken and transfer the skillet to the preheated oven. Bake for 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F or 75°C).
  10. Once finished, remove from the oven, let rest for 5 minutes, and then remove the toothpicks or twine. Serve warm, drizzled with any remaining balsamic glaze.
