Ingredients

  • 2 whole ripe avocados
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella balls, halved
  • 1 tablespoon balsamic glaze
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon fresh basil, chopped

  • 4 slices your favorite bread (sourdough or whole grain recommended)

Instructions

  1. Begin by toasting the slices of bread until they are golden brown and crispy on the outside. This will act as the base for your delicious toppings.
  2. While the bread is toasting, cut the avocados in half, scoop out the flesh, and place it in a bowl.
  3. Mash the avocados with a fork until creamy but still chunky. Add a pinch of sea salt and freshly cracked black pepper to enhance the flavor, mixing well.
  4. In another bowl, combine the halved cherry tomatoes, mozzarella balls, fresh basil, olive oil, and a pinch of salt and pepper. Gently stir to mix all the ingredients together.
  5. Once the bread is toasted, spread the mashed avocado generously on each slice.
  6. Top the avocado layer with the cherry tomato and mozzarella mixture, ensuring an even distribution for a colorful presentation.
  7. Drizzle balsamic glaze over the tops of the toast to add a tangy sweetness that complements the ingredients.
  8. For an added touch, garnish with additional fresh basil leaves for a burst of flavor and color.
