Ingredients

  • 1 cup rolled oats
  • 2 cups almond milk
  • 1 tablespoon chia seeds
  • 1 tablespoon maple syrup
  • 1 zest lemon
  • 1 juice lemon
  • 1 cup fresh blueberries
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 2 tablespoons crushed nuts

Instructions

  1. In a mixing bowl, combine the rolled oats, almond milk, chia seeds, and a pinch of salt. Stir until well mixed.
  2. Add the lemon zest, lemon juice, maple syrup, and vanilla extract to the oat mixture. Mix thoroughly to combine all the flavors.
  3. Gently fold in the fresh blueberries, reserving a handful for later use.
  4. Divide the mixture evenly into two jars or airtight containers.
  5. Seal the containers and refrigerate overnight (or for at least 4 hours) to allow the oats to absorb the liquid and flavors.
  6. In the morning, give the oats a good stir. If the mixture is too thick, add a splash more milk to reach your desired consistency.
  7. Top with the reserved blueberries and crushed nuts for added texture before serving.
