Blueberry Lemon Overnight Oats Tasty Morning Boost
Ingredients
- 1 cup rolled oats
- 2 cups almond milk
- 1 tablespoon chia seeds
- 1 tablespoon maple syrup
- 1 zest lemon
- 1 juice lemon
- 1 cup fresh blueberries
- 1 teaspoon vanilla extract
- 1 pinch salt
- 2 tablespoons crushed nuts
Instructions
- In a mixing bowl, combine the rolled oats, almond milk, chia seeds, and a pinch of salt. Stir until well mixed.
- Add the lemon zest, lemon juice, maple syrup, and vanilla extract to the oat mixture. Mix thoroughly to combine all the flavors.
- Gently fold in the fresh blueberries, reserving a handful for later use.
- Divide the mixture evenly into two jars or airtight containers.
- Seal the containers and refrigerate overnight (or for at least 4 hours) to allow the oats to absorb the liquid and flavors.
- In the morning, give the oats a good stir. If the mixture is too thick, add a splash more milk to reach your desired consistency.
- Top with the reserved blueberries and crushed nuts for added texture before serving.
