Ingredients

  • 1 cup mixed fresh berries (strawberries, raspberries, blueberries)
  • 2 tablespoons simple syrup (or to taste)
  • 1 cup sparkling water or club soda
  • 1 2 heavy cream
  • 1 bunch fresh mint leaves for garnish
  • 1 cup ice cubes
  • extra berries for garnish

Instructions

  1. In a blender, combine the mixed berries and simple syrup. Blend until smooth. If you prefer a smoother texture, strain the mixture through a fine-mesh sieve to remove the seeds, but it's optional.
  2. Fill a tall glass with ice cubes to about halfway. Pour in the berry puree until it fills the glass about two-thirds full.
  3. Slowly pour sparkling water over the berry mixture, filling the glass almost to the rim. Stir gently to combine.
  4. In a separate bowl, whip the heavy cream until it forms soft peaks. Spoon the whipped cream on top of the soda mixture, creating a beautiful layer.
  5. Garnish with fresh mint leaves and a few whole berries on top for an attractive presentation.

💡 Chef's Notes

Straining the berry mixture is optional for a smoother texture.
