Ingredients

  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 1 cup granulated sugar, divided
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 2 baking soda
  • 1 4 salt
  • 1 2 unsalted butter, melted
  • 1 2 buttermilk
  • 1 2 cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking dish with non-stick spray or butter.
  2. In a medium bowl, combine the mixed berries, 1/2 cup sugar, cornstarch, lemon juice, and vanilla extract. Gently mix until the berries are coated. Pour the berry mixture into the prepared baking dish, spreading it evenly.
  3. In a separate bowl, whisk together the flour, remaining 1/2 cup sugar, baking powder, baking soda, salt, and cinnamon (if using).
  4. Create a well in the middle of the dry ingredients and add the melted butter and buttermilk. Stir until just combined; do not over-mix, leave it slightly lumpy.
  5. Spoon the batter over the berry mixture, ensuring coverage but leaving some berries peeking through.
  6. Bake in the oven for 35-40 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let cool for about 10 minutes before serving.

💡 Chef's Notes

Serve warm, topped with a scoop of vanilla ice cream or a dollop of whipped cream. Garnish with a few fresh berries and a sprinkle of mint leaves for an elegant touch.
