Berry Cobbler Delight Simple and Flavorful Treat
Ingredients
- 2 cups mixed berries (strawberries, blueberries, raspberries)
- 1 cup granulated sugar, divided
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 2 baking soda
- 1 4 salt
- 1 2 unsalted butter, melted
- 1 2 buttermilk
- 1 2 cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking dish with non-stick spray or butter.
- In a medium bowl, combine the mixed berries, 1/2 cup sugar, cornstarch, lemon juice, and vanilla extract. Gently mix until the berries are coated. Pour the berry mixture into the prepared baking dish, spreading it evenly.
- In a separate bowl, whisk together the flour, remaining 1/2 cup sugar, baking powder, baking soda, salt, and cinnamon (if using).
- Create a well in the middle of the dry ingredients and add the melted butter and buttermilk. Stir until just combined; do not over-mix, leave it slightly lumpy.
- Spoon the batter over the berry mixture, ensuring coverage but leaving some berries peeking through.
- Bake in the oven for 35-40 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Remove from the oven and let cool for about 10 minutes before serving.
