Baked Salmon in Foil with Asparagus Healthy Meal Idea
Ingredients
- 2 fillets salmon
- 1 bunch asparagus, trimmed
- 2 tablespoons olive oil
- 1 lemon zested and juiced
- 2 cloves garlic, minced
- 1 teaspoon fresh dill, chopped (or ½ teaspoon dried dill)
- 0.5 teaspoon paprika

Instructions
- Preheat your oven to 400°F (200°C).
- Cut two large pieces of aluminum foil (about 12x16 inches each) and place them on a baking sheet.
- In a small bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, dill, paprika, salt, and pepper.
- Place the salmon fillets in the center of each piece of foil. Arrange the asparagus around the salmon, creating a bed for the fish.
- Drizzle the olive oil mixture evenly over the salmon and asparagus.
- Fold the sides of the foil over the salmon and asparagus, sealing the packets tightly to lock in moisture.
- Place the baking sheet with the foil packets in the preheated oven and bake for 15-20 minutes, or until the salmon flakes easily with a fork and the asparagus is tender.
- Carefully open the foil packets to avoid steam burns. Serve warm, garnished with lemon slices and additional dill, if desired.
