Ingredients

  • 14 oz firm tofu, pressed and cubed
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 tablespoons sesame oil
  • 2 tablespoons brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch
  • 2 tablespoons sesame seeds
  • 1 tablespoon grated fresh ginger
  • 1 clove garlic, minced
  • 1 cup cooked jasmine rice or quinoa
  • 1 cup steamed broccoli florets
  • 1/2 cup shredded carrots
  • 1/4 cup sliced green onions
  • to taste fresh cilantro for garnish

Instructions

  1. In a mixing bowl, combine soy sauce, sesame oil, brown sugar, rice vinegar, grated ginger, and minced garlic. Add the cubed tofu and gently toss to coat. Let marinate for at least 15 minutes.
  2. After marinating, sprinkle the cornstarch over the tofu and toss gently to coat all the pieces evenly. This will help create a crispy texture when air-fried.
  3. Preheat your air fryer to 375°F (190°C). Place the tofu cubes in a single layer in the air fryer basket. Cook for 15-20 minutes, shaking the basket halfway through to ensure even cooking, until the tofu is golden and crispy.
  4. While the tofu cooks, cook the jasmine rice or quinoa as per package instructions. Once cooked, fluff and divide between serving bowls.
  5. Add steamed broccoli and shredded carrots on top of the rice/quinoa. Once the tofu is done, add it to the bowls.
  6. Sprinkle sesame seeds and sliced green onions over the bowls. Add fresh cilantro for an extra pop of flavor.
  7. Enjoy your Air Fryer Sesame Teriyaki Tofu Bowls warm, drizzled with additional soy sauce if desired.
